Shrimp and Crawfish Etouffee

1 Prepare the vegetables by mincing the garlic and chopping the celery, onion, and bell pepper.
2 In a greased Dutch oven over medium-high heat, cook the diced andouille sausage until browned, then remove it from the pot. Add butter and flour to the rendered grease, whisking continuously to create a roux until it reaches a rich chocolate-brown color. Reduce heat to medium low.
3 Stir in the celery, onion, and bell peppers, cooking until softened, then mix in the garlic and tomato paste for added depth.
4 Pour in the seafood stock and season with Worcestershire sauce, hot sauce, Cajun seasoning, cayenne (if desired), and bay leaves. Cover and let it simmer gently for 15 minutes before removing the bay leaves and adjusting the seasoning to taste.
5 Fold in the crawfish tails, shrimp, and browned andouille sausage, then sprinkle with fresh green onions. Allow the dish to simmer for another 20 minutes.
6 Serve warm over fluffy white rice and savor every bite!
